It changes the color palette texture for the Purple and Golden Rupee. In the original game it's pink and orange and the option changes those to appear more purple and yellow, to match the 3D models (the get item model - e.g. opening a chest).

The tooltip definitely refers to this, albeit somewhat loosely:

Corrects the colors for the Purple (50) and Golden (200) Rupees

I don't see how this is either an enhancement or bug. Option has a tooltip. Closing.

@GhostlyDark Thank you very much for the explanation. Given this, I think a better tooltip text may be

Corrects the color palette for the in-game Purple (50) and Golden (200) rupees.
In the base game they are closer to pink and orange, this changes them to more closely match their 3D chest item models.
