How much of the filesystem can be saved outside Docker?

I'm basically wondering if most of the container's filesystem can be mounted/symlinked, so that docker commit has the minimal amount of data to save.

In my case, I have this Arch container running on a Digital Ocean machine with one of their elastic volumes mounted on the host machine. I'm already mounting that into the container and symlinking folders in the container onto that elastic mount. Could I even do that for /usr, /var, /etc, etc? Those are the paths that see the most changes from package installs and so on. So if they're just symlinks then docker commit will hardly have to make any updates.
