Missing createdAt and updatedAt fields

Issue Description

The current Email plugin does not store the time and date when a document in the Emails Collection has been created or updated.

Steps to Reproduce

  1. Trigger an acton that sends an email, e.g. place an order
  2. Look at the Emails collection, verify there are no createdAt and updatedAt fields.

Possible Solution

Add these fields.
Currently, there seems to be no schema validation, but it probably is a good idea to find a solid way to keep track of this or already write a migration, in case a schema will be enforced at some point, so this doesn't suddenly start to become an issue.
