figured it out, need to change the module in keras callbacks.py. Change from collections import iterable to from collections.abc import iterable. Works like a charm now!!

This file on Keras seem to have been updated and no longer has that import, now on version 2.9.0, while PlaidML imports version 2.2.4. I guess the dependency version should be updated to avoid needing to update the file locally on every new env.

Another solution is to downgrade Python in the virtualenv.

First, install an older Python (ex. 3.9): https://unix.stackexchange.com/a/676045
Make sure you add all needed packages: apt install python3.9 python3.9-dev python3.9-distutils

Crete the virtualenv with that python: virtualenv --python=python3.9 env
Then activate that env and install the dependencies (including conda).

[Edit: changing python to 3.9, since this is what Conda uses for PlaidML build)
