This is not nginx-proxy related, but a setting in the nikolausc/bookstack-pi container. You need to set the basepath which Bookstack uses to construct the assets paths (exactly the CSS errors you see).
I looked at the nikolausc/bookstack-pi and this seems to be APP_URL=https://example.com (solidnerd/docker-bookstack#266)
But I strongly suggest to update to a modern image.
The nikolausc/bookstack-pi seems to be not updated for the last 4 years. And is using Bookstack 0.27.5 which was released on 16 October 2019 and contains (now patched) security issues. And you are missing a lot of cool Bookstack features.
You could use https://github.com/NikolausC/rpi-bookstack-docker or https://docs.linuxserver.io/images/docker-bookstack/ which are maintained.
