That's quite a dump. I don't have a Mac, so I can't easily try to reproduce your problem.

I found a solution for this today.
on mac os Big Sur (11.3) create a config file in ~/.cargo/config.toml and add this
[build]
rustflags = ["-C", "link-args=-Wl,-undefined,dynamic_lookup"]
after adding the config.toml I was able to build the plugin with cargo clean && cargo build
from janus-plugin-sfu.
