The script here hasn't been updated in a few years, and it appears that since then, the format of an ES theme has changed somewhat. It used to be that each individual system had its own theme.xml within a subfolder of the theme; that's no longer necessary, so there can be a theme.xml that the script isn't seeing, because it's a global xml.

If you're using the default carbon-2021 theme in RetroPie, the quickest workaround is to install the older carbon theme, and use that to generate the launch images. You don't need to use the older theme as the main ES display, just for compiling the images.
