I found your project and I have to say it is very impressive from technical side. But what I am missing is features description (what actually it can do). I wanted to try it by myself, but got some errors on setup :(

So is it possible to find a description what this tool is capable of?

I am particularly interested in schedule generation functionality, where admin enters hours or dates which must be covered and employees select date ranges which are suitable for them. And the hours which are not selected is allocated automatically (since they must be covered by some employees anyway :) Is that possible with employee-scheduling?

Replace LocalStorageModule with your own storage. The new storage should have interface, localStorage, cookieStorage. See an example in book Programming JavaScript Application page 95 Module-Interfaces.
