Hi there. This is the right place to ask, but I'm not sure I understand the question completely.

When you say "create rapidly a matrix on excel based on a database", did you mean exporting a network matrix into a CSV spreadsheet file that can be opened with MS Excel? If so, yes, DNA can do this. You just have to select "csv" under "Format" in the network export window.

When you say "raw", did you mean without normalisation? You can set any options you want in the network export dialog before exporting to CSV.

"Some statistics" could be anything. But 40% against and 60% in favour could be done by exporting a two-mode (affiliation) network for positive mentions and one for negative mentions separately and then calculating these things in Excel or R based on the counts.
