¿Cómo te funciona el siguiente código?

let list = function() {
  for (var i = 0; i < students.length; i++) {
    console.log(`(${student.id}) ${student.name}`);
  }
}

La variable "student" no existe en ningún lado.
Podrías re-implementarla así:

let list = function() {
  students.forEach(function(student) { 
    console.log(`(${student.id}) ${student.name}`);
  });
}

menu.js

El gran switch que tenés ahí, lo podrías re-implementar con un diccionario, te quedaría más prolijo, imaginate algo así:

var funciones = {
1: studentForm,
2: teacherForm,
//... etc
};

//después haces:

  rl.on('line', (data) => {
    funciones[parseInt(data)]();
});

node_modules no tiene que subirse...

La gracia del package.json es que nos permite reproducir este folder en el sistema donde queramos desplegar nuestra app, por lo tanto el node_modules nunca se suba al sistema de control de código.
