Types inside of definitions not generated for nbformat jsonschema

Hi there @jimblackler ! This is a really cool project. I was trying to generate java types around Jupyter's nbformat.v4.schema.json. While generation succeeded, it seems that none of the types inside of definitions were generated, and the cell type which contains any of raw_cell, markdown_cell, or code_cell instead generated as generic JSONObjects.

Any idea why this might be? I've attached the generated java from your online sample

Feature request: Ability to configure multiple sub-folders for schemas

Currently, the resourcesPath configuration option in the project only allows for a single folder to be specified for storing schema files. However, in many cases, it would be beneficial to be able to organize schemas into multiple sub-folders.

For example, in a project with multiple domains or subdomains, it may make more sense to organize schema files into separate folders for each domain. This would help to keep the project structure organized and make it easier to find specific schema files.

Therefore, I am requesting the ability to configure multiple sub-folders for schemas within the resourcesPath configuration option. This would allow for greater flexibility in organizing schema files and improve the overall usability of the project.
