Cut out sheet from photo
Cut out paper sheet from photo based on 4 corners of the sheet. Possible algorithms: corner detection, Hough transform for line detection + line crosses.
Image rescaling
Apply rescaling image (e.g. by setting constant DPI) to improve Tesseract processing. Research about calculating optimal image resolution and DPI
Align text on sheet
Rotate sheet based on text block so that text will be aligned, i.e. parallel.
Create pipeline from existing code
Arrange all existing code into a image processing pipeline.
Image binarization
Research image binarization methods in OpenCV and Scikit-image, with focus on local (adaptive) binarization.
Align sheet with perspective transform
Apply perspective transform to align rorated sheet (assuming it's already detected) and get it as a separate image.
Image denoising
Apply image filtering to denoise binarized text photo.
