Why choosing GPLv3 license ?

"The GNU GPLv3 is a copyleft license that requires anyone who distributes your code or a derivative work to make the source available under the same terms, and also provides an express grant of patent rights from contributors to users." source

"Permissions of this strong copyleft license are conditioned on making available complete source code of licensed works and modifications, which include larger works using a licensed work, under the same license. Copyright and license notices must be preserved. Contributors provide an express grant of patent rights." source

But this project isn't software, there are licenses for that

"Open source software licenses can be used for non-software works, and often are the best choice. This is particularly the case when the works in question can be edited and versioned as source, e.g., open source hardware designs." source

What about Creative Commons licenses ?

Creative Commons licenses "gives the authors of the creative work, a selection of four conditions and their combinations, under which they license their work". Also "Creative Commons Licenses are a set of copyright licenses that give the recipients, rights to copy, modify and redistribute the creative material, but giving the authors, the liberty to decide the conditions of licensing" (source), and this is incompatible with our philosophy of continual and constant improvement of this work, which must stay open, free and available for everyone without any condition.

"Use CC0 to opt out of copyright entirely and ensure your work has the widest reach." (source) The problem is that it does not require to make available complete source code of licensed works and modifications.
