I can confirm that, after buying a pack of RW's it seems as if the drive simply cannot read them. I've been doing some work and attempted the ESR patch, AND burning the straight ISO and the disk, when inserted doesn't even spin up. This is only my experience with RW's and it's by no means indicative of others' results. I'll update this if I find a disk with good compatibility.
UPDATE: I confirmed the issue was indeed with the RW's. Bought a 100 pack of Verbatim DVD-R's. The disk certainly spun up, however after patching a game with ESR and modifying the necessary stuff in the UDF definition tables, it gave a "Read halted due to malfunction" error. Back to the drawing board.
Also, if anyone actually HAS experience with MIPS and Ghidra please contact me. I have version 3.0U and am trying to get into the process of making it work. Got the memory dump for the bios done, still need to get a EEPROM dump for 3.0U, but if anyone has pointers on identifying the memory offsets the DVD events and functions take place, or at least the neighborhood please hit me up on my GitHub account.
I truly would love to get some collaboration going to make this thing more broad in version support. I only have C++ experience so we really need people like CTurt that have experience in embedded systems.
2nd UPDATE:
So, my PS2 just randomly read one of the RW's. It may be due to the recalibration someone was mentioning in another issue report.

Afaik the differences between + and - are relevant only at burn time, after it's been burned it's the exact same when read back. But maybe there's some details I'm not aware of
from freedvdboot.
I used DVD+R and it worked just fine
from freedvdboot.
While most modern DVD-drives (aka basically every drive you'll come across in 2020) support both + and -, there are old drives that only support one type.
Since the readme claims others may work, but they put more strain on PS2 laser
it might be the case that the drive's support for DVD-R is better than the support for DVD+R.
I'm just making guesses, however. It might be that the difference doesn't matter and the autor wasn't aware of the difference between DVD+R and DVD-R.

DVD+R requires extra movement on the lasers part to read the same data from a DVD+R they will still work but as the read me says adds more strain on a system already known to have goofy DVD drives

does dvd-rw work?

I've looked online and I did find claims of some people having issues with PS2 (and even other consoles) not reading DVD+R discs properly but DVD-R discs working just fine, so I was wrong
from freedvdboot.
@TremxNeo maybe; due to how RW media works the pits and lands on the disc are less "distinct" than their R counterparts. I have old drives that can read R media but not RW, and even if the PS2 were capable to read RW media, it would put even more strain on the laser
from freedvdboot.
I have tried a DVD-RW on my 3.10U unit, burnt at 4x. It worked, but I would not advise on using them due to the increased strain. My unit was getting a bit cranky in loading discs before but this put it over the edge. At no fault of the exploit or any homebrew, just the fact it was old and hasn't been serviced coupled that I used a DVD-RW.
DVD-Rs would work the best, perhaps at a slower burn speed if possible.

TL;DR
DVD+R are not compatible with every PS2 model.
Also, the PS2 haves issues with + disc as the lens needs to do more effort to read them.
+R, -RW and +RW can be used, but are not advised as the effort for reading can cause issues on the lens.
Just use DVD-R discs, please. That will save you from several reading issues Ave damage to your lens.

DVD+R work on pretty much every hardware, if they are booktyped to DVD-ROM!
