We can't modify the tags of the dataset without breaking the COG layout? Oof.
@vincentsarago did you find that the copy function didn't copy the tags? I think we should try putting resampling metadata in the default domain like dst.update_tags(ovr_resampling_alg=Resampling[overview_resampling].value. It's likely that copying will copy the default metadata. I'll check the GDAL code to be sure.
