Adding unit tests will surely help the project. I'm thinking of using Unity, since it seems the most simple and straightforward library (my needs aren't complex too).

As it is now, the build process is really painful and unconventional, every component is compiled separately and bundled together awkwardly. See for example the really terse build workflow.

Proposed Solution

Build both Gosu and MRuby when building the wrapper, using CMake. I think this is a doable matter for myself, however Windows will be hard.
