Adding video links to empty section

Hi there! :) I noticed that the Youtube videos (from channels without an accessibility focus) in the README file is empty, and I would like to add some links to videos in it.

feat: Add Table of Contents

Add a Table of Contents section just under Resources, linking to each resource category section within Readme.md.

This will aid navigation.
