You should use the STATIC_OPTIONS variable in the config file to give to duplicity any complementary option.

In your case you want to use --volsize as specified in the manpage of duplicity and described for example in this article (https://halfthetruth.de/2010/10/11/backup-with-duplicity-and-amazon-s3/) found on the web after googling "duplicity amazon s3 chunk size"

With the variable volsize you can set the size of each chunk (default is 25 MByte). This is important because S3 doesn't allow files bigger than 5 GByte. If you set it to a small value, duplicity will create a huge bunch of files but this could speed up restoring. On the other hand a large number could save some time during the backup process.

I'll close this issue assuming that this will solve your problem, but if something goes wrong with the script while using custom static options, just don't hesitate to reopen it ;)
