I'm actually not seeing such an audio quality selector. In addition, unless I'm mistaken, the audio qualities are associated with particular video renditions and I'm not sure that we can switch it out because we don't know if the audio would fit.
The @videojs/playback team may have more information. Here's the master manifest for ease of access:

As @gkatsev noted the stereo and surround audio groups are associated with specific rendition playlists so there isn't a way to switch between the two. Each group has an alternate track so you will see a choice of en or dubbing. This is also how native HLS playback behaves in Safari.
