I realized that I didn't ask the right way, and well I didn't get the right answer ;-)
I want to completely disable the styles (those one we can modify through your admin page) in the child theme because I need to surcharge a lot...

You can completely disable the styling extension by creating a configuration file in the child theme

child-theme/framework-customizations/theme/config.php

with the following contents

$cfg['extensions_blacklist'] = array('styling');
