I changed my upload building back to the direct connection to the FTDI232 and there it's working. So the breakout board with the multiple cables was the reason.

If you google "Brownout detector was triggered" you will find out this is mostly an issue because of a unstable/broken/too small power supply. This cannot fixed by software. You could try to add a big capacitor.

Take a look at this issue: espressif/arduino-esp32#863

May be you can extract some useful tips. I would play around with different solutions because it's hard to predict the root cause.

The job of the capacitor is "being a tiny battery to buffer spikes" and must be connected between VCC and GND. The photo looks good to me.
