running recipe[java] will call include_recipe "java::#{node['java']['install_flavor']}"
so as long as you set ['java']['install_flavor'] to Oracle (as the README.md example does), java::oracle is run. In fact if you call java::oracle directly you get:
unless node.recipe?('java::default')
Chef::Log.warn("Using java::default instead is recommended.")
Mainly for the set_attributes_from_version recipe, however, the oracle recipe will call it just in case you do call java::oracle directly.

Ah, OK. I was pretty sure that I'd set ['java']['install_flavor'] = 'oracle' but I am doing some funky stuff with environments: http://logikal.is/blog/2013/02/06/cleaner-chef-environments-with-ruby/ (and I'm on chef-solo) so it might be down to that.
