I'm afraid it's out of scope for this particular project, but feel free to fork and implement your own version (I suggest starting from the refactor branch, which will be v1.0 soon).
For now, you can host multiple instances of these and call each one a channel. :)

Oh, absolutely, and I believe that a proper channel implementation would make the server a few times more complicated. This was just so I don't forget my ideas. =)

FWIW, I'd avoid mixing IRC-style and Unix-style commands. Stick with IRC, it already has commands for all of this.
