Hey Cruvie! Thanks for your answer! Did you see the comment on the issue?
The problem was that the version of the generator was "retracted" and my
.lock was pinned to that version without me noticing it!

Same here! Any thoughts? I even downgraded to 3.19.6 and still same error

Here is the thing: riverpod_generator was pinned to version 2.4.1 that was rectracted:

@maurodibert received your email, I fixed it by clean my flutter env follow https://docs.flutter.dev/get-started/uninstall?tab=macos, but it not a good solution, since it breaks everything and not shot the true bug.

I fixed it in the lastest flutter version by doing:
flutter clean
flutter pub upgrade --major-versions
flutter pub get
Then run build runner and build the project
