This is an upstream issue, nothing that can be solved in the RetroPie scriptmodule.
In the future, please use the forum for support issues and not the issue tracker
from retropie-setup.

Mame builds fine they have removed the arcade and mess builds, in that sense they wont be coming back upstream. Lr-mame re-implemented them but there will be missing mame and mess targets that will need constantly updated by yourselves if you want to use the mame/mess split. Its a 50 megs difference in file size with the full build.
libretro/mame@2e763dd there has been a few issues with missing things but if you grab these files from lr-mame master, it will fix your build issues you having.
