分かります、結構面倒だけどまあcommitを分ければdiffとか汚れてもいいやという気持ちで妥協している。

「テストを通すごとに必ず変わってしまう文字列」と「そうではない文字列」を判定するロジックを実装し、もし前者しか変わっていない場合はファイルに書き込まないというのが実装方針として良いと思います。

まあこれの判定ロジックが難しくて実装出来ないかもと思ってるんですが...

判定ロジックを完璧なものにするのは極めて難しいと思うのですが、ほぼ間違いなく毎回変わるものに関してはデフォルトで、そうでないものに関してはオプションで指定できるようにする（指定の方法はいいのが思いつきませんが…）というのはどうでしょうか。
ほぼ間違いなく毎回変わるもの、というのは、各モデルのIDと外部キー、それにタイムスタンプ（created_atとupdated_at）があるかと思います。ひとまずこれだけを除外するだけでもだいぶノイズは減るのではないでしょうか。
