Have you written your schema similar to this? You need to define the object schema in the subSchema property:

var schema = {
    address: { type: 'Object', subSchema: {
        street: {},
        zip: { type: 'Number' },
        country: { 'Select', options: countries }
    }}
};

I understand that the Object editor requires a subSchema, I just was hoping that it would also work on arbitrary user defined key-value pairs. Perhaps there is a different editor that achieves this?

You could achieve something like this with the List editor. Each item in the list would be an object of 2 fields (key and value).
