Hey!
I'm not sure we have a fully good answer to that yet -- we're possibly hoping a few other mentors will join in -- but also I think it will be a bit of discussion, if a candidate has a strong preference for one or thinks they're specifically amenable to one or another that definitely is good to mention.

I have read the project requirements and am interested to work on the same, I have already started contributing on the bowtie repository. As there are multiple other project ideas also that have been floated, could you please provide me some insight on how to proceed further for the same.
