I tried to put this into ploy.conf but without any success:
[defaults]
ploy_ezjail_install_release=10.1-RELEASE

that's weird, because your suggested approach is pretty much what i would have suggested myself...
i'm not sure, if our parser actually supports [defaults]. have you tried defining ploy_ezjail_install_release in the corresponding ez-master section? that should work...

actually, i just remembered... to configure variables for all sections, you must put them in a section named [global] - i'm not sure it's documented anywhere, but i just remembered, that it's so :)
