For anyone else that dislikes this behaviour, you can disable it by replacing CompletionDataFactory.GenerateMethodSignature with the following and rebuilding OmniSharpServer

    private void GenerateMethodSignature(IMethod method)
    {
        _signature = _signatureAmbience.ConvertEntity(method).Replace(";", "");
        _completionText = _ambience.ConvertEntity(method);
        _completionText = _completionText.Remove(_completionText.IndexOf('('));
    }

The emacs and sublime plugins both now have snippeting support for type arguments and method parameters. The server backend can return snippets.

It should be easy to integrate with ultisnips etc. but I don't actually use vim any more. Either of you fancy taking this on?

Closing. When completing with ultisnips, completion works as in the example gif above. When completing without ultisnips, no parens are included. As far as I can tell, all options are well covered here.
