You can disable it completely by not setting setcompleteopt+=preview.

I don't think that OmniSharp should be responsible for closing the preview window as there are multiple plugins that can work in conjunction with this, e.g. Supertab, YCM, NeoComplCache, AutoComplPop.

YCM has the following setting

g:ycm_autoclose_preview_window_after_completion

Supertab has

g:SuperTabClosePreviewOnPopupClose

If you have no extra plugins installed then the following snippet in your vimrc file should work (taken from http://stackoverflow.com/questions/3105307/how-do-you-automatically-remove-the-preview-window-after-autocompletion-in-vim)

" If you prefer the Omni-Completion tip window to close when a selection is
" made, these lines close it on movement in insert mode or when leaving
" insert mode
autocmd CursorMovedI * if pumvisible() == 0|pclose|endif
autocmd InsertLeave * if pumvisible() == 0|pclose|endif
