Thanks you, that indeed was the problem.
I can recommend https://github.com/coreybutler/nvm-windows for switching node version on windows

Apparently node-gyp has installation issues with Node 12.
Installation works fine with Node 10.
If your OData service is V4, try the new implementation in https://github.com/oasis-tcs/odata-openapi/tree/master/lib that does not rely on Java and node-gyp.
