UIPEthernet uses Nagle's algorithm to improve network efficiency and therefore sends packets asynchronous to the calls of client.println().
It does not make use of timer-interrupts to run this in the background (to avoid conflicts with user-code), all packet-processing is done as a side-effect of other methods call.
If your sketch is not calling into UIPEthernet after the last client.println() any more the processing of further packets just stalls.
You'll want to add a call to 'Ethernet.maintain()' to loop() to get this running.
