Also, when i try to build it with mpv built and installed from source, i get Project ERROR: mpv development package not found , even though the headers and libraries are in place:

Works on my machine.
For local installs I think you need to add /usr/local to your pkgconfig path like PKG_CONFIG_PATH=/usr/local/lib/pkgconfig:/usr/lib/pkgconfig:/usr/share/pkgconfig

Hello,
With current trunk, I can reproduce this. But it depends on the file. Some are working, some not. All using subrip embedded subtitles.
For those that are not working, I can see the subtitles flicker when I switch the subtitle track with “S” shortcut.

Same thing here on Arch Linux. I compiled from source, I also tried mpc-qt-git (AUR package). It will not load/display subtitles, the only exception being the first subtitle track (in case it's embedded in the video).
So I can't load external ones, or switch to different subtitle tracks that are embedded.

This got fixed recently with a change in the defaults about forced subtitles. Use a recent release / git commit and reset your options.
