+1. Until these callbacks are available it seems hackish or impossible to use JQuery UI plugins that attach to a DOM element, charting libraries, d3.js and so on. There must be a better way than using setTimeout({DOM node binding logic}) within a template helper function...

This is something that the team's working to address, in the spark branch. I'm leaving this open for now, since it's not part of a release yet, but I'll be closing it soon.

Spark, our new UI engine, supplies hooks into various events in the lifecycle of template rendering, such as http://docs.meteor.com/#template_rendered. We think this should be enough for your use-case. If not, feel free to reopen the issue with more details.
