I restored your 2.1.1 but I don't see any improvement. Also when I clone your repository and run the FontAwesome5.UWP.Example project I receive the error as I note above, "Cannot create instance of type 'FontAwesome5.FontAwesome'.
My theory is a conflict is created by having two classes FontAwesome, both in the FontAwesome5 namespace. In version 1.x you had the UWP element in the FontAwesome5.UWP namespace. This would explain why the error occurs that an instance a type couldn't be created, because UWP sees the internal static class.
If I rename the internal static class to something else, i.e. FontAwesomeInternal, and rebuild, your UWP example project runs as expected.
I am using Visual Studio 2019 16.9.4, if that makes a difference.
