How about the following definitions?

call textobj#user#plugin('handyobjects', {

\   },

\     'select': 'iu',
\     'pattern': '_\zs\_[^_]\+\ze_'
\   },
\ })

Note that these definitions do not behave the same as built-in text objects such as ab and ib in all cases.
