Since you've overridden the default action on your controller by specifying an action on your route you need to call the render method in order to render a template. The render method will by default render the template specified on the controller, or in the route options. So you can just do this:

unsubscribe: function () {
  var email = this.params.email; // no need to decode the uri component as that has already been done
  Meteor.call('...');

  this.render();
}

To get fancy you could render something initially, and then render something else when your method call returns.

unsubscribe: function () {
  var self = this;

  this.render('doingWorkTemplate', { /* options */ });

  Meteor.call('...', function (err) {
    self.render(); // render the actual final template
  });
}
