From the 'states' table. Notice the decimal (raw Wh instead of kWh) is missing from a couple of entries after being unavailable during a restart.

Can you check sensor.envoy_202132047150_lifetime_energy_production if there is no spike there too ?

I notice that the source used "Wh"

Its in the original post of this issue - see the top chart vs the bottom chart. The top chart is the envoy lifetime energy production sensor. There is a small bump as the sensor catches up to the lost time during reboot/offline time, but not to the magnitude shown by the utility helper.

How are you configuring utility meter with kWh ? (there is no option for that in utility_meter configuration) Are you talking about defining unit_of_measurement through the device options ?

Interesting enough all data in utility_meter should have the same units as its source (Wh) as there is no unit conversion in this component...

its in the Helper setup, but the helper is recording the values in the states table according to this setting (except during the restart):

could you do an experiment and set the unit of measurement on the source sensor to kWh ?
