New documents on hosted Grist are now python 3.9. Existing documents can be switched to python 3 (if you are willing to make any fixes to formulas that might be needed) using an "engine" setting in document settings.
Grist-core itself can be configured to run with a range of python versions.

We have documented Python 3 support here: https://support.getgrist.com/python/ - including how to switch an existing document from Python 2 to Python 3, and fixes for common formula differences. There will be more work to do to assist migrations. Closing this roadmap issue now that Python 3 is supported and documented.
