Ah, found the data. On my Ubuntu 20.04 system it's under ~/.config/mpk.
Back-up/delete/restore cycle tested OK.

Is there a reason why there is also a separate "~/.config/My Personal Kanban" directory with completely different content?

Good question. Must be something to do with packaging and install scripts for Linux. I've done nothing in the app to use 2 separate folders. It should be only 1, the mpk folder.

Da-kota found the data on Ubuntu. Where is it on Windows? I will also need to back-up and restore.

The program is exactly what I was looking for, but I need to be able to switch computer some time.

I've found the location on Windows:
C:\Users<User>\AppData\Roaming\mpk

Both files are needed:
app.dat
boards.dat

from mpk-desktop-app.
