Hello again,
I've just discovered that it was a bug on the built-in PDF reader of Google Chrome. I tested on Firefox and it worked. OMFG I'm so happy!!! And if I download the pdf on Google Chrome and open in Okular I can see the footer as well.
Just sharing here for those who might have the same problem.

fyi: #83 a "simpler" way of setting the header/footer.html
(note, WkHtmlToPdf requires the DOCTYPE in those header/footer HTML files, might be part of your initial problem)
