Scratch that. This seems to be the issue with appleseed studio being very old on macOS--the latest download, 2.1.0 beta, is from 2019 and uses python27. So this is an appleseed error.
Starting the studio from command line complains about the project being created with a newer version of appleseed:
~/appleseed/bin/appleseed-studio "~/Library/Caches/FreeCAD/Cache/FreeCAD_Doc_0dcd7426-a760-4300-ae22-c11447059a45_da39a3_39687/Project.appleseed"
2023-11-24T17:50:12.727272Z <002> 33765 MB warning | this project was created with a newer version of appleseed; it may fail to load or render properly with this version.
