I've got a basic layout, but no "real" header or footer in place.

Also, the Bootstrap gem recommends manually importing each SCSS file
manually. I went ahead and left the require statements in, for now. I would
like to chat about that to weigh the ease of use for the user.

You mean like @import "bootstrap"; vs //= require bootstrap?

Ah yeah, I always remove require_tree too.

Maybe the best solution here is to do this:
- Remove application.css
- Add an application.scss that we defined (based off the original) and we can show examples of overriding colors and things in there too
- Possibly remove require_tree and show people how to do @import instead if it requires scss variables across files?
