You can always channel logs from stdout to file using system tools. Like calling eve-server > log.txt or, better eve_server | tee log.txt (tee works only on linux, or in cygwin environment). This way what was printf'ed or cout'ed will be displayed and therefore saved.
Also, I did not notice this issue on debian, it probably flushes buffers even if the program crashes.

most of the 'old' log-to-file systems are no longer used.
if this problem arises again, a new bug report should be filed.
