Inox doesn't perform full defunctionalization, rather it does something like incremental defunctionalization. The closest you can get to a defunctionalized program are the .smt2 files you mention, and they'll only correspond to defunctionalization at depth k (for some given k).

In terms of outputting these directly, I'm afraid we don't support that currently. However, @romac recently added an --unroll-bound option which allows specifying the unrolling depth. You can probably hack something up with a fake solver that returns SAT/UNSAT when needed to continue unrolling, or just let Inox talk to a real SMT solver and ignore its output.
