Got around to this quite late. I've been trying to port latte to Joplin's light mode, but apparently, it just breaks a lot of things and introduces way too many inconsistencies in the UI compared to latte in the dark mode.
Rectifying this seems to involve a lot of monkeypatching and just makes it more difficult to maintain the latte variant compared to the other three dark variants.

I'm going to close this issue since I think a better way to tackle this would be to provide this usercss as a Joplin plugin instead of simple usercss which seems to break quite often. Thanks to those who tried helping out with this issue!
