Our backend supports it as you've seen but the library doesn't fetch any format other than JSON. The code is around here:

https://github.com/Vizzuality/cartodb-nodejs/blob/master/lib/cartodb.js#L171

I think it doesn't make much sense to fetch formats other than JSON from the library as it's intended to use the data for consumption by JS code, but if you want it shouldn't be difficult to add a format parameter on that line.

It should at least allow for GeoJSON format. Maybe this is fixed in later versions.
