Answer to myself, using a volume / bind for /var/log/nginx do fix it, however would be great to have it working out of the box

Hello @souchprod,
This is weird because we don't use /var/log as a volume or anything else. Anyway, since v1.2.3 version there is no root process inside the container and a user with pid/gid 101 is writing to the different volumes (e.g. /etc/letsencrypt, /etc/nginx, ...). Do not hesitate to reopen a new issue if needed.
