The main points of this bug report…

No iPad ever made has NFC so the yubikey option should NEVER be presented when iPadOS is detected.

I have the "one of my keys supports NFC" option unchecked so the yubikey option should NEVER be presented on any of my mobile devices even if they do support NFC.

It is horrible UX to hide the alternative TTOP behind the non-obvious 3 dot menu instead of presenting it as a button on this screen.
